100g of whatever you would like in the cookies - chocolate, nuts, dried fruit, etc.
Preheat your oven to 180C/160C fan/gas 3.
Start by creaming together the butter, caster sugar and the light brown soft sugar into a bowl until well combined, light and full. If you are using your Kenwood kMix make sure that an adult is there to help you.
Once creamed together, crack the egg and add the vanilla extract and mix together for about a minute until your mixture is smooth.
Once the egg is well combined into the mix, by using a spatula, I like to scrape the sides of the bowl to make sure everything gets well combined. Once you’ve done this add in the flour and a pinch of salt and mix on a low speed until a dough has been formed.
As soon as the dough forms, stop mixing to prevent getting a tough cookie. This is the fun part where you can get creative and add in your favourite chocolate, nuts, raisins or whatever you would like to have in the cookies.
Carefully fold your chosen filling into your cookie dough, or mix it on the lowest speed possible if you are using a Kenwood kMix.
You are now ready to get the cookie dough into balls! Being a perfectionist, I like to weight my cookie dough into 45g balls as I feel like this gives the perfect cookie size, but you can do smaller or larger cookies if you want.
Pop the cookies onto a baking tray lined with parchment paper to avoid the cookies sticking, and slightly flatten them down. It’s super important that you leave your cookies lots of space from each other as they will spread. I also like to add some extra chocolate onto the top of my cookies, but you guys can add whatever you would like!
Bake for around 10-15 minutes depending on the size of your cookies. Make sure that an adult is there to help when putting the cookies in the oven! They will be done when the sides of the cookies are nice and golden brown! At first they may seem slightly raw, however as they cool down they will firm up and be nice and chewy. As we are using self raising flour, the cookies will rise in the oven, but down worry when they will flatten down once out of the oven - this helps get a super chewy cookie!
