Hidden Veg Pizza Sauce

  • Ingredients

    For the Sauce

    • 1tbsp Olive oil
    • 1 Red pepper
    • 100g Carrots
    • 1 (large) Onion
    • 1 (large_ Stick of celery
    • 2 Garlic cloves
    • 3tbsp Concentrated tomato purée
    • 400g Chunky passata
    • 1tsp Sugar
    • 2tsps Red wine vinegar
    • 2tsps Dried oregano
    • Large handful fresh basil
    • Salt and pepper to taste

    To Assemble (per pizza)

    • 1 Stone baked pizza base
    • 75g Mozzarella cheese
    • Fresh basil
    • Your choice of toppings
  • Why not try stirring any leftover sauce through some cooked pasta for a super quick and tasty dinner?

    1. In a large saucepan, heat the olive oil over a low heat.
    2. Finely chop the pepper, onion and celery and place them in the pan.
    3. Grate the carrots and add them to the pan, stirring to combine.
    4. Place a lid on the pan and leave the vegetables to soften down until the onion and celery are translucent.
    5. Remove the lid and, increasing the hob to a medium heat, add the tomato purée, passata, sugar, vinegar and oregano, as well as salt and pepper to taste.
    6. Allow the sauce to come to the boil, before lowering the heat and allowing the sauce to simmer until the vegetables are completely softened.
    7. Remove the pan from the heat and allow the sauce to cool slightly.
    8. Next, pour the sauce into a food processor and blitz until almost completely smooth (I like it a little bit chunky).
    9. Pour the sauce into a clean bowl or jar and allow to cool completely.
    10. Finally, chiffonade cut your basil and stir it through the cooled sauce.
    11. When you are ready to assemble your pizzas, spread a generous serving of your sauce onto the base, spreading it out to the edges with a spoon.
    12. Spread the cheese over the sauce, before topping with your choice of extras.
    13. Bake in the oven, following the instructions on your precooked pizza bases.
    14. Serve with a sprinkle of fresh basil for the perfect finishing touch!
