280g plain flour
100g caster sugar
2tsp baking powder
1/2 tsp bread soda
1/4 tsp salt
75 ml sunflower oil
1 cooking apple
2 tsp cinnamon
2 tsp water
2 tsp light brown sugar
300g icing sugar
First, cut the apple into small cubes, place in a saucepan with the brown sugar and water and stew on a medium heat until the apple turns soft.
Sprinkle the cinnamon on top of the apple and leave aside to cool, while the apple is cooling preheat the oven to 180°.
In a bowl combine all the dry ingredients flour, caster sugar, baking powder, bread soda and salt and mix together.
In a separate bowl combine all the wet ingredients 1 egg, buttermilk and oil.
Pour the wet ingredients into the dry ingredients and whisk together until the dry ingredients are just incorporated.
Add in your apple to the mixture and fold together with a spatula.
Scoop your mixture into mini loaf tin cases and bake in the preheated oven (180°) for 20 minutes.
When baked leave to cool, while cooling, combine your Stork and icing sugar till soft and fluffy.
Decorate with buttercream and apple & cinnamon.
