Ingredients

Cake:
200g caster sugar
200g softened butter
4 eggs, beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk

Icing:
300 grams icing sugar
150 grams butter
1 tbsp milk

Instructions

1. Preheat oven to 170C fan/190C/gas 5 and butter 3 tins.

2. Beat together the caster sugar, softened butter, the eggs, self raising flour, baking powder and milk in a large bowl. The batter should be smooth and soft. 3. Separate the mixture between 3 tins and use a spatula to smooth the surface.

4. Bake the cakes in the oven for about 20 minutes or until it is golden brown.

5. Take the cakes out of the oven and leave to cool.

For the icing:
Beat together the butter and icing sugar until smooth and creamy. Then slowly add in milk as needed.
