Super-food banana bread

3 ripe bananas
2 cups of rolled oats
2 large eggs
1/4 cup of honey
1/4 cup walnuts, chopped
2 tablespoons chia seeds
1 teaspoon baking soda


1. Preheat oven to 350°F/180°C and lightly grease a loaf pan.

2. Add bananas, eggs and honey to a blender and blend until smooth

3. Mix the oat flour, walnuts, chia and baking powder into a large bowl.

4. Combine the dry and wet ingredients to create smooth batter.

5. Pour batter into prepared loaf pan.

6. Garnish the top of the batter with thinly sliced banana or oat flakes and bake for 30-35 minutes.

7. Let loaf cool completely in loaf pan. You can store the bread in an airtight container for 2-3 days or in the refrigerator for up to a week.
