Cheese And Leek Loaded Potato Skins

4 large potatoes
1 leek
2 tbsp butter
2tbsp olive oil
200g mature chedder grated
2tbsp double cream
Option mustard


Cook the potatoes spiked with fork and rubbed with half oil in an oven 180° 1 hour 15 min. Cook leak with half butter and oil for 20 in low heat.
Cut potatoes in half scoop out insides and mash with the butter, cream, leek and most of cheese. Spoon into skins top with rest of cheese cook in oven for 15 more minutes.
