Strawberry Chocolate Unicorn Cupcakes

Ingredients

FOR THE SPONGE
175 g Caster sugar
175 g Butter or baking spread I use Stork
3 Eggs large
1 tsp vanilla extract
150g Self raising flour
20g coco powder
35 g Sprinkles

FOR THE BUTTERCREAM
200 g Butter
400 g Icing sugar
1 tsp strawberry extract
3-4 drops of two different food colouring of choice
1 tbsp Milk optional

FOR DECORATION
Unicorn cake decorations

Instructions

1. To make the sponge I first mixed together the butter and caster sugar.

2. Then I added the eggs and vanilla extract and mixed them in.

3. Next I mixed in self raising flour, coco powder and folded in the rainbow sprinkles. I divided the cupcake batter into cases, then I baked them for 25 minutes.

4. While the cupcakes were cooling I made a strawberry buttercream by mixing together butter, icing sugar and strawberry extract, then split it into two bowls and added the food colouring. I put one bowl of the icing into one half of the piping bag then the other bowl into the other half the the piping bag. I piped the buttercream onto each of the cupcakes.

5. Finally I added onto the unicorn cake decorations.
